If you think you know authentic Italian cuisine…Think twice.

Beyond the three magic P’s –pasta, pizza, polenta– there is a vast choice of traditional recipes that omit animal protein. The average everyday Italian diet is very vegetarian-friendly, and the reason for this is the country’s cultural heritage.

Italy experienced opulence only after the industrial revolution. Animal protein until then was a lavish indulgence not all layers of society could afford, especially in the more poverty-stricken, rural areas of the country. Proof of this late 19thcentury austerity is now densely present in the traditional meatless preparation of classic recipes and regional specialties. Italians heavily rely on locally-grown produce and seasonal crop cycles to prepare their daily meals

Michelin-starred Chef Cristiano Tomei walked us through a reinterpretation of everyday Italian favorites.

 

About Cristiano Tomei

Michelin-starred Cristiano Tomei, is considered one of the most talented chefs in Italy.

He is largely known for his tremendous ability to combining local traditions with foreign influences. His cuisine enhances locally-grown products, recalling his grandmothers’ cooking methods, as well as his deep connection with his Tuscan roots. while interpreting and pairing them with a more modern twist.

He is also known for hosting a variety of cooking TV shows in Italy, acting as a judge on “Cuochi d’Italia” and “Pupi & Fornelli”, and on the “Kitchen Sound show” side by side with Chef Alessandro Borghese. He has a great capacity to entertain the public thanks to his playful and genuine character.

His restaurant – “L’Imbuto” -located in the historic city of Lucca (Tuscany), conquered the Michelin star in 2014. It has little to do with fine dining restaurants. It almost looks like a bistro. There’s not even a menu:”Just say the number of courses and leave it to the chef”. He explains: «Cooking is like jazz: the music score is set, but harmonies are the result of the musician’s improvisation. As chefs, we must offer happiness, our goal is to engage the senses”

The online masterclass was run on the Zoom platform from 4:00 to 6:00 pm EST.

VIP Guests received a home-delivery gift bag containing the ingredients and recipes necessary to prepare the dishes, as well as informative collateral about the products used.

During the two-hour online class, the audience was educated on how to appreciate the selected products needed to create the dishes, while preparing their own recipe from their kitchen.

MICHELIN-STARRED CHEF LUIGI NASTRI AND MIAMI’S RENOWNED CHEF GIORGIO RAPICAVOLI PERFORMED AT “THE AUTHENTIC ITALIAN TABLE FOOD & WINE FESTIVAL”

“The Authentic Italian Table – Food & Wine Festival” organized by the Italy-America Chamber of Commerce Southeast on November 20th featured a Masterclass from Michelin-starred chef Luigi Nastri from Rome (Italy) and Italian-American chef Giorgio Rapicavoli, winner of the Food Network’s “Chopped” Ultimate Champions in 2014.

Chef Nastri and Rapicavoli presented a Gourmet Experience focused on “Seasonal ingredients and Innovation on Italian desserts”.

The Masterclass – mainly focused on the use of PDO (Protected Denomination of Origin)  and PGI (Protected Geographical Indication) products for the preparation of authentic Italian desserts – was organized in collaboration with the Consulate General of Italy in Miami, within the framework of the “Week of Italian Cuisine in the World”.

Chef Luigi Nastri obtained his Michelin star while working for the restaurant Stazione di Posta in Rome. His cuisine is characterized by creative preparations mixing traditional Italian flavors and aromas with international inspirations.

Chef Giorgio Rapicavoli has made a name for himself in the Miami area, where he now owns and manages two restaurants Eating House and Glass and Vine, well-known also thanks to his victory in Food Network’s first Chopped Ultimate Champions in 2014 with his fantastic dessert.

 

     

The Authentic Italian Table- Food & Wine Festival

 

The Authentic Italian Table is a unique high-end Food & Wine Festival, which exclusively focuses on the Italian cuisine and its flavors. The event will be held on November 20th at the Port of Miami – Cruise Terminal D. The occurrence is embraced by “The Extraordinary Italian Taste” campaign; initiative promoted by the Italian Government, which aims to raise awareness on the authenticity of Italian products among American consumers.

The event will enrich the understanding and appreciation of Italian culture by promoting the country’s food and wine, through partnerships with authentic Italian restaurants, as well as Italian F&B producers and importers.

During the Grand Tasting (6:00-9.00 pm) various Chefs from local Italian restaurants will have the opportunity to delight the public with signature dishes prepared through authentic Italian recipes. Guest will be able to enjoy live music, while tasting the best selection of genuine Italian pasta, cheese, cold cuts, pizza, gelato, wine and cocktails.

The Grand Tasting will also include a Food Contest and Gourmet Experience.

Food Contest
Multiple participating restaurants will be competing to earn a winning title for the Food Contest. Even though it will ultimately be journalists and food influencers to elect a Best Signature Dish, it will ultimately be up to the participating public to cast their vote for the election of the evening’s Tastiest Bite.

Gourmet Experience
Guests will discover the genuine taste of Italian food and wine – as well as apprehend about Italian culinary traditions and recipes. The involvement will be sustained within a private area, and include a wine tasting and a culinary demonstration.

A Dinner to celebrate Italian Cinema & Food

 

The Annual Fall Dinner Party by the Italy America Chamber of Commerce Southeast, will take place at Doma Wynwoodon October 9th, starting at 7.30 pm. The Dinner will be a great opportunity for the Chamber’s members to discover the screening program for the 16th edition of Cinema Italy (the longest established Italian film festival in the Southeast), and learn what the 2nd Edition of our Authentic Italian Table- Food & Wine Festival will offer this year.

The dinner will start off with a networking cocktail reception,and continue with a 4-course menu and wine pairing.

Members will be joined by local food bloggers and authorities, for the presentation of The Authentic Italian Table – the only high-end Food and Wine Festival in Miami with main focus on Italian cuisine and flavors, taking place this upcoming November 20th. This year event will take place in the frame of the “Week of Italian Cuisine in the World” presented by Consulate General of Italy in Miami.

CONQUERING NEW MARKETS: EUROPEAN PERSPECTIVES

 

The European Chambers’ group in Miami – formed by the Italian, Spanish, German, British, French and Irish Chambers of Commerce – in conjunction with the City of Coral Gables, will be hosting a technology-focused business seminar about “Conquering New Markets” on Thursday, September 26th at the Coral Gables Museum from 6-8 pm.

The event is addressed to all entrepreneurs and managers interested in hearing tech-leaders’ strategies on how to enter new markets, and what key factors to pursue in order to successfully accomplish such tactics.

Currently, South Florida is experiencing a substantial growth in the technology sector. In fact the counties of Miami, Broward and West Palm Beach have become home to over 8000 technology businesses – the 12th highest affluence of technology businesses in all of America.

European tech and digital companies are part of this trend and 4 expert speakers – Mia Nygren from Spotify, Philip Nicholas from Amadeus, Pepe Lopez de Ayala from Twitter, Santiago Canalejo from Theventure.city – will share their points of view on why these companies are choosing Miami as their U.S. base, and how they are contributing to the city’s economic growth. Following the seminar, a networking cocktail will be held.

“True Neapolitan Pizza” Masterclass at ‘O Munaciello | August 22, 2019

On August 22nd, 2019 the Italy-America Chamber of Commerce – in collaboration with the pizzeria ‘O Munaciello – held a Pizza Masterclass dedicated to a selected group of food bloggers from South Florida.

The Masterclass aimed at promoting the knowledge of genuine Italian products, which represent the main ingredients of authentic Neapolitan pizza.

In particular, the presentation focused on the following products:

  • Piennolo DOP cherry tomatoes
  • Extra virgin olive oil DOP from Puglia region
  • Gaeta PDO olives
  • Parmigiano Reggiano DOP
  • Prosciutto San Daniele DOP
  • Provolone Valpadana PDO
  • Prosciutto di Parma PDO
  • Pantelleria DOP capers

 

 

The Masterclass was opened by of the Chamber’s Executive Director, who presented to the audience to the main goals of “The Extraordinary Italian Taste” initiative.

This introduction was then followed by a contribution of Dr. Marissa Ciorciari (Marissa Ciorciari Integrative Nutrition), who explained in detail the benefits of following a Mediterranean diet.

The word was then given to Carmine Candito, Master Pizzaiolo at ‘O Munaciello, restaurant certified with the Italian quality seal “Marchio Ospitalita’ Italiana” that also obtained from the prestigious Gambero Rosso magazine the “3 Spicchi” (“3 slices”) recognition. This important award made ‘O Munaciello earn a spot in the Gambero Rosso’s guide of the best Italian pizzerias in the world, sharing the “3 spicchi” recognition with only 2 other pizzarias.

Chef Candito offered a thorough introduction to the different products he uses to prepare his pizzas, invited the bloggers to prepare a pizza with him and later on to taste their creations.

 

 

2019 IACCSE General Assembly and upcoming Board elections

The 2019 IACCSE General Assembly will take place on Thursday, May 2 at Istituto Marangoni Miami, 3700 NE 2nd Ave (6 pm). 

Besides the approval of the 2018 Financial Statements and 2019 Budget, as well as the presentation of the upcoming events, the agenda will include the presentation and approval of the amended IACCSE By-Laws.

The main revision regards the executive offices, for which the term has been extended from two to three years for a maximum of two mandates. This change will allow greater continuity in terms of strategy and planning in order to ensure the Chamber’s development.

After the approval of the new By-Laws, the new Board of Directors election process will begin, in compliance with the new By-Laws. The 2019 Board election will take place in May-June, 2019. The expiration of the term for the new Board will be June 2022.

On May 3, all IACCSE members will receive the letter with the instructions to present the candidate statement to run in the upcoming elections for the IACCSE Board of Directors.

Members seeking a position as a Director on the IACC Board must submit the Candidate Statement no later than 5:00 p.m. (EST) on May 17, 2019.

The Election will begin on May 27, when the official ballot with the qualified candidates will be e-mailed to all Voting Members.

Each Voting Member must cast his vote online by 5:00 p.m. (EST) on June 14, 2019.

The Chamber is an asset of our bi-national business community in the Southeast and needs the commitment of motivated entrepreneurs and managers to keep growing and keep promoting Italy manufacturing excellence in the US market.
